If you’re following me, I’m sure you’ve noticed that I eat one of these avocado and spinach sandwiches like every other day, but I changed it up today! I added egg and it was delicious! I even had part of it without the bread (because I realized it was stale) and it was even better!

I’m Biking from Austin to Alaska

Being a Texas 4000 rider has been a dream come true so far and I can hardly wait to leave for Alaska! Training is a b****, but I’m slowly getting into better shape and I feel wonderful.

We got our jerseys last week at meeting and I finally have a profile on the LIVESTRONG Texas 4000 team website, so I feel a little more legitimate. I was really craving something sweet tonight so I made up this delicious baked apple recipe! It tasted just like pie, but with probably a quarter of the calories. 
1 apple
1/4 cup of unsweet applesauce
Cinnamon (to taste)
1/4 cup of splenda
1 tbsp imitation low calorie butter
Mix ingredients together to coat apple slices, bake in a baking dish at 400 degrees for 20 minutes.
